Belgorod scientific center to develop functional food line
All changes in the recipe are patented

A line of functional food products and enriched with additional ingredients will be developed on the basis of a scientific and educational center in Belgorod, the press service of Belgorod State University told TASS on Sunday. University scientists have already received two patents for the corresponding technology and recipe and intend to further develop this path.
"Two patents have been received for the production technology and formulation of an immunity-enhancing dessert with nanostructured additives. As part of the scientific center, a line of functional products with different additives will be developed, which will make it possible to produce desserts not only with different flavours, but also with different properties that affect the body," said the press service.
The first patent will increase the biological value of a fig-based product by adding to its composition dry echinacea extract, which is rich in iron, calcium, selenium, silicon, which will help in the prevention of gastrointestinal diseases and oncology. The scientists of the university and Professor Alexander Krolevets from Kursk Regional Open Social Institute received the second patent for the technology of making desserts with the addition of Manchurian aralia, a plant that helps to strengthen endurance, physical activity and immunity, without ruining the flavour.
"Each change in the recipe is patented. Correction of the chemical composition of many desserts will increase the content of vitamins, minerals, dietary fiber," added the press service.
What is more, the technology developed by scientists, unlike traditional ones, does not require any sugar. This will allow people who suffer from diabetes mellitus, metabolic diseases and endocrine diseases to consume functional food.
About the national project
"Innovative Solutions in Agricultural Industry" was created to implement the national project "Science". The center was founded under the auspices of the government of the Belgorod region by the leading universities in the region in partnership with big agricultural holdings. The center aims to boost the development of top-notch technologies in accordance with the priorities of the scientific and technological development of Russia and its transition to highly productive agriculture. The center has 35 employees, its economic and financial model is designed for the period from 2019 to 2024 and includes budgetary and extra-budgetary sources.
Plans to create a network of 15 world-class scientific centers are written in Vladimir Putin's May Decree and are one of the tasks of the Science national project. According to the goals of this national project, in 2024 Russia should become one of the five leading countries carrying out research in areas determined by the priorities of scientific and technological development.
